La pizza al mattone (\u00ab\u00a0sur la brique\u00a0\u00bb), pr\u00e9par\u00e9e, comme son nom l&rsquo;indique, dans des <strong>fours en brique<\/strong> (un mat\u00e9riau qui transmet plus lentement la chaleur), aurait s\u00fbrement br\u00fbl\u00e9 ou s\u00e9ch\u00e9 \u00e0 des temp\u00e9ratures aussi \u00e9lev\u00e9es.\n\nApr\u00e8s la Deuxi\u00e8me Guerre mondiale, un <strong>pizzaiolo ing\u00e9nieux<\/strong> \u00e9migr\u00e9 \u00e0 Turin r\u00e9sout brillamment le probl\u00e8me en cr\u00e9ant une p\u00e2te avec plus d&rsquo;eau et avec une <strong>l\u00e9vitation plus lente<\/strong> qui permettait donc \u00e0 la pizza de se \u00ab\u00a0synchroniser\u00a0\u00bb avec les temps de cuisson de la farinata.\n\nLa po\u00eale en aluminium dans laquelle la p\u00e2te est vers\u00e9e sert \u00e0 cr\u00e9er des doses individuelles et permet d&rsquo;\u00e9viter le m\u00e9lange de la p\u00e2te \u00e0 pizza avec la p\u00e2te de pois chiches pendant la cuisson. Avec ce syst\u00e8me de pr\u00e9paration original, la pizza \u00ab\u00a0au po\u00ealon\u00a0\u00bb a acquis de <strong>nouvelles caract\u00e9ristiques organoleptiques<\/strong>.
